Ingredients for the pancake
200 g buttermilk
120 g flour
4 eggs
1 grated zest of an untreated orange
10 g Nevella Stevia (granular low calorie sweetener)
1 pinch of salt

Preparation
Whisk the buttermilk and eggs in a bowl. Add flour and stir until smooth. Add Nevella Stevia, zest of orange peel and salt and stir. Heat some oil in a small pan and bake eight small thin and golden brown pancakes. Keep the pancakes warm in an oven.
Ingredients for the orange ragout
2 oranges
80 g raisins
0.4 l orange juice
12 g Nevella Stevia (granular sweetener)
small amount of starch for thickening
Preparation
Peel the oranges and cut out the filets with a sharp knife. Boil up the orange juice with the raisins and Nevella Stevia. Mix some starch with some orange juice and thicken the orange juice with this mixture. Add the orange filets and serve this ragout with the warm pancakes.
